My Favorite Vanilla Cupcake Recipe!
Hey everyone! Sorry I’ve been away for so long. Things have been really busy with the holidays. They will continue to be busy, however, I’ll do my best to keep y’all updated. I’ll add more pictures and recipes as often as possible. I believe everyone should have a go-to vanilla cupcake recipe. You know, that one recipe that doesn’t ever fail you (or whomever you share them with). This one is it for me. It’s great with any kind of buttercream, but I’ve also eaten it plain and it’s still delicious! Try it out soon and you won’t be disappointed.
I’ve included a video of me making this recipe with my stand mixer, but it’s also just as easy to use a whisk and do it by hand. The cupcakes in the video also get decorated with white roses and red poinsettias. If y’all are interested in more buttercream flower tutorials just let me know!
My Favorite Vanilla Cupcakes
This recipe makes 15 cupcakes when scooped out in 1/4 cup portions.
1 2/3 cups flour
1/2 teaspoon baking powder
1/4 teaspoon baking soda
1/2 cup melted butter
1 cup sugar
1 large egg
1/4 sour cream
3/4 cup milk
2 teaspoons vanilla
Preheat oven to 350 degrees F.
Place 15 cupcake liners into a cupcake pan.
Mix together flour, baking powder, and baking soda in a bowl.
In a small bowl, mix together the egg, sour cream, milk and vanilla.
In a large bowl, microwave butter until melted. Add the sugar and mix well. Scrape down the sides of the bowl if using a stand mixer. Add the egg, milk, sour cream and vanilla mixture to the butter and sugar. Mix well. Add the flour mixture and mix well. Again, scrape the sides and bottom of the bowl until the big lumps are gone. Scoop out 1/4 cup into each cupcake liner and place into the oven. Bake for 18-22 minutes or until the cupcakes lightly spring back when touched. Let cool completely before frosting. Enjoy!
